Nepali-Style Mustard Greens

Ingredients

  • 2 large bunches mustard greens, torn or chopped into small pieces (enough to fill a medium bowl-these will cook down a lot)
  • 1-inch piece of fresh ginger root, crushed in mortar & pestle or food processor
  • 1/2 small onion chopped.
  • fresh cilantro and basil chopped finely.
  • Spice mix of dill seed, coriander, fenugreek and black cumin (“kalonji”)
  • Vegetable oil

Directions

  1. Preheat oil in a frying pan or work.
  2. Stir in onions, ginger, cilantro, basil and spice mix.
  3. Cook for a few minutes, then add mustards and cook wilted about 2 to 3 minutes.
